El Queijo Serra da Estrela es un queso de pasta blanda de la región de Serra da Estrela. La receta tiene más de 2000 años de antigüedad. Se elabora con cardo de cardo, leche cruda de oveja y sal. La cría de ovejas y cabras, introducida en la región por los primeros pobladores neolíticos, sugiere que la primavera y el verano se pasaban en los pastos de las zonas altas y el invierno en los terrenos más bajos de los valles fluviales. La importancia de la Serra da Estrela en la cultura neolítica se manifiesta en el descubrimiento de que los megalitos de la cuenca del río Mondego estaban construidos predominantemente con una alineación que permitía ver la sierra desde el interior de la cámara. Al mismo tiempo, también se podía ver la salida de Aldebarán, la estrella más brillante de Tauro, detrás de las montañas, y su salida helíaca a finales de abril/principios de mayo podría haber sido utilizada como marcador temporal para el desplazamiento hacia los pastos altos de la Serra da Estrela. Esta narración arqueológica se corresponde con el folclore local que explica el nombre de la sierra[4].
